The composer for Final Fantasy IX was Nobuo Uematsu, the man who had scored all the Final Fantasy games to this point (along with a number of other games). Roses of May (also known as Roses of May and occasionally mistranslated as Loss of Me for reasons I still don't understand), is Beatrix's musical theme. It's a very beautiful and haunting melody, and one of many great pieces of music on this soundtrack.
We first hear Roses of May when Beatrix is onboard the Red Rose, and this is when we begin to hear her thoughts and the woman behind the merciless general. It's the first scene that tells us that there is more to Beatrix than just being one of the antagonists in the game. It later plays during some of her other appearances in the game.

Roses of May has also been performed as part of the Distant Worlds show, with the world wide premiere of the song happening back in November 2014 at the Royal Albert Hall in London - a show I had the extreme pleasure to attend. It was amazing (and I cried). If you can get to any of the Distant World (or A New World) concerts, I highly recommend them. I've been to several and they always remain emotional and wonderful.
Something to Protect is a rearranged version of Rose of May. It is has a faster, more urgent tempo and is the music that plays continuously when Beatrix and Steiner fight endless Mistodons during Kuja's attack on Alexandria.

And finally, Mystery Sword is the music that plays for the first two battles you fight against Beatrix. It is an ominous song, and indicates that some bad things are going to happen to you.
